The format for this site has changed. I cannot click on postings or recipes. I am gutted because everyone seems to have forgotten Let’s Do Lunch. More importantly, Roger has forgotten us. This is sad.

Roger is making changes to website frequently while continuing to get his new Yellow Book published.
The website had to be updated and although it is not the best, it was the best we could do with my limited experience.
I’m not a programmer and not real comfortable with HTML so this was the best we could do for now.
Word Press is supposed to be the best web site design for beginners but is still not as user friendly as it could be.
I will try my best to look into users being able to post comments.

I’m sorry I could not find the time to stay on the previous letsdolunch.com site due to having my mother with dementia living with us for 5 years. I’m happy to say she is doing well in a facility close by. We are blessed that she accepts this as her home and has enough interaction to satisfy her love of people and of music.

Thanks Linda for helping to try again with Roger to have a community come back. I have missed everyone! If anyone remembers “mrsj”, that is me.

          Welcome back Julie.
I have missed everyone also and the message boards became corrupt a year or so ago so Roger was able to pay for a programmer to upgrade and restore the Message Boards before al the recipes were lost.

This recipe has been my “go to” recipe especially for Group Dinners

    TACO SOUP

1 lb. ground turkey or lowest fat ground beef (I use ground buffalo)
    2 med. onions – chopped
1 pkg. dry taco seasoning mix (No MSG)
1 pkg. dry ranch dressing (optional)

In skillet, combine the above ingredients. Cook and brown meat, stirring frequently. Add all of the following ingredients.
1 – 15 oz. can pinto beans (or 2 small cans)
    1 – 15 oz. can black beans
1 or 2 cans Chick Peas
1 can Navy Beans, great northern or cannellini
    * Drain and rise beans until foaming clears.
1 – 11 oz. can vacuum packed corn niblets
    1 – 15 oz. can diced tomatoes
1 – can mild Rotel Tomatoes and Green Chiles
1 qt Beef Broth (without MSG). Substitute another can of diced tomatoes if broth not available.
    Several chopped seeded Jalapenos
Chopped red, yellow, orange peppers for color and taste

Bring to a boil and lower heat to keep low boil. Cook about 15-20 minutes – stirring often.
Garnish with shredded cheese if desired

Thank you Linda for posting that recipe! I know it is delicious!. I used LDL to loose over 40 #s in 2015 and have kept it off till recently when I have put on about 20-30 lbs and need to take that off before it gets to be more. This is the only way of eating that I have been successful with so will be coming back to the message board because I know connecting with everyone else was a big part of my success! I was hopeful on the board before.
